Ingredients

  • 1 C. Cream of Rice®
  • 4 C. Coconut milk
  • 2 kiwifruits
  • 2 gold kiwifruits
  • 4 Tbsp. toasted almonds
  • 4 Tbsp. toasted coconut

Directions

  1. Wash and peel the kiwifruits.
  2. Cut into slices or quarters; set aside.
  3. In a large saucepan, bring the coconut milk just to a boil.
  4. Stir in the Cream of Rice® and stir to combine.
  5. Bring the mixture back to a low boil, then turn down heat to simmer.
  6. Stir constantly for about 30 seconds or until the mixture has thickened.
  7. Portion the Cream of Rice® into 4 serving bowls and top with a mixture of kiwifruits, almonds and coconut.
  8. Enjoy immediately.
